It’s that magical time of the year again! We’re gearing up for the festive season here at Merlin when office Christmas parties start going with a swing, so we thought we’d share with you some of our best loved cocktails that were served (and tasted by us!) at a partnership launch this month for Payne & Gunter with award winning, Celebrity Chef – Dipna Anand. Crafted by Shake & Stir, these delicious cocktails are the perfect accompaniment to all your office christmas parties!
Signature P&G Cocktail
This signature cocktail has a light smoky flavour for gin lovers! It incorporates one of Payne & Gunter’s most loved ingredients: the pineapple.
- 40ml Portobello Road Gin
- 5ml Campari
- 15ml Smoked Pineapple Syrup
- 20ml Fresh Lime Juice
Method: Shake and fine strain
Garnish: Pineapple Leaves
Glass: Coupe
Rhuby Fizz
This fresh and slightly sweet cocktail is perfect for vodka lovers with a wonderful fusion of flavours. It’s also a rather beautiful shade of rhubarb pink!
- 30ml Ketel One Vodka
- 15ml Briottet Rhubarb Liqueur
- 10ml Campari
- 20ml Fresh Lime Juice
- 15ml Honey Syrup
- Fever Tree Indian Tonic to top up
Method: Build over crushed ice and churn
Garnish: Rhubarb stripes & edible flower
Glass: Highball
Virgin Matcha Mojito
For those of you who want to enjoy the richness of a cocktail without the buzz, this delicious Matcha Mojito is for you. Refreshing and light, you’ll want more than one!
- 40ml Cloudy Apple Juice
- 40ml Matcha Tea
- 15ml Elderflower Cordial
- 15ml Fresh Lime Juice
- 15ml Honey Syrup
- Splash of Soda Water
Method: Build over crushed ice and churn
Garnish: Pomegranate seeds, Mint leaves and Mint Sprig
Glass: Highball

You can take part in immersive theatre at the London Dungeon with ‘more bite’ in the form of a tasty twist as you journey through London’s dark past. Eat, drink cocktails and be sinful!
